Although we only make teeny tiny amounts of our Shiraz, we like to retain some blending power throughout the vintage. This means picking small batches from carefully selected parts of the vineyard, running several small ferments, and having a variety of top end French oak available. When I say available, we spend a big slice of budget on getting scrumptious barrels! This means we blend the best drop possible before going to the bottling line. It’s a critical process to ensure that the wine drinks beautifully and balanced now, and will also age well in bottle.
